How would you go about getting fit for one tmb long iron. Can they swap in different shafts to try or are they all fixed heads.

When I went to a Titleist Thursday fitting they had everything there to try, irons, fairway woods, drivers, hybrids. They will be able to fit you for individual T-MB long irons with multiple shafts and compare with hybrids to see what's best for you.
